“Ayala, based in Aÿ in the heart of Champagne, has been transformed since Bollinger bought it in 2005 and this nonvintage proves it. This is a balanced blend of 40% Chardonnay, 40% Pinot Noir and 20% Pinot Meunier. The result is crisp while not too dry, and therefore drinkable as an apéritif. Apple and bright citrus combine with green plums to give a fruity wine that is also structured. The cellarmaster continues to reduce the dosage (sugar) so there is a crisp, tight aftertaste. “Roger Voss Editor Wine Enthusiast
Over the last 10 or so years this great dry Champagne has appeared in Multiple 5 Star reviews. Wine Spectators Top 100, Best in Class and Gold at many wines shows including our own NZ International Wine Show.
“From the beautiful township and cellars in Ay, Champagne the bouquet delivers aromas of fresh oatmeal and white stone fruits, sweet citrus, fresh brioche, white blossoms and a core of mineral. Delicious, fresh, fine and complex on the palate. A bold and expressive mousse, crisp salivating acidity and fruit flavours that mirror the bouquet. A core of minerality remains through the palate adding length and complexity. Perfectly balanced and long. Best drinking from purchase and through 2028+.” Cameron Douglas 95 Pts MS
